My first time trying this and I was enabled from the folks on this forum...


I put it up two different ways...three quart jars with fermenting lids. Bad thing with that was the largest jars I could find were quart and it required that you leave a few inches above the cabbage. Left a lot of the jar unused...dunno about that but we shall see how it all works out. The other five quarts were put up according to P. Allen Smith's Aunt's recipe... can't wait to see the end results with both!!

Looks interesting.. the wife and I love kraut..I could eat a jar full myself.. I'll be waiting to see how it turns out for you.

my wifes 97 year old grandmother eats it as fast as i can make it. I usually put up 2 churns a year but didnt this season.

On day 6 of the fermenting jars and it is definitely fermenting. After day ten, I am supposed to crack the seal and try the kraut and if it is not to my liking can reseal and let it "perk" a bit more.

The canned jars need a month to "cook" before trying. Can't wait!!

Way to go Maggie. I just opened another quart of mine tonight. I used the same lids as you did and some 1/2 gallon jars. On my last batch I used my sis in laws large kraut churn. I'll be buying a churn.

Like the others said, canning kills the probiotics. It's supposed to last in the fridge for 6-12 months.

I don't know if it's because I've been getting the probiotics from the kraut that I made or just coincidence, but I have yet to have a cold or a stomach virus since I started eating it. That's going on 6 months. The probiotics were the whole reason I tried making it. A nurse practitioner friend of mine suggested that I try it because I was getting sick so often. So far, so good. I don't know what long term effect it will have on my immune system but it sure needed a kick start.

The fermenting lids are awesome! I let it ferment 11 days before breaking the seal and it was perfect!! If I am truthful, I was a bit skeptical but it worked great!! Thanks for the enablement!!
