We weren't sure what we wanted to eat tonight, so I stopped by Trader Joe's and grabbed some chicken breast and when I got home I split them length wise. I then seasoned them all with a mix of my own seasoning:

2 parts cumin
2 parts paprika
1 part season salt
1 part garlic powder
1 part black pepper
1/4 part cayenne
1/4 part dry mustard

I sprinkled that dry rub on the chicken and put all the pieces in a big Ziploc, then I poured in some extra virgin olive oil and some apple cider vinegar and let all that marinate.

I then took:

1/2 an onion
1 jalapeno pepper seeded
1 celery stalk
2 garlic cloves
I chopped all that and put it in a little olive oil in a small stock pot to sweat out.

To that I added:

4 cans of white beans
1 tbsp of cumin
A pinch of salt
1 tsp of chppped garlic
1 tsp black pepper

Then I let that come to a boil, turned it down and let it simmer.

Got the kamado started and up to about 350 - 400 and put on the chicken to grill for about 15 minutes or so turning and rotating the grill to get them all evenly done.

We pulled the chicken out and brushed them with local honey to add some sweetness to the spice. We served everything up with some of Mrs. Irish's creamy mayo slaw.

It was some good eats.

Afterwards I just chilled on the back deck with a glass of Madeira and a nice little Petite Montecristo while Mrs. Irish and Irish Jr. cleaned up the kitchen.

Not a bad dinner for a Monday evening...
