So South Bama got me hankerin' for some red beans. I took his recipe and kind of made it my own: 1 pound of smoked sausage 1 bell pepper diced 1 vidalia onion diced 3 celery stalks diced 1 can diced tomatoes drained 2 tablespoons of garlic diced 2 cans Blue Runner beans 2 cans red kidney beans drained 1 cup rice 1 cup chicken broth 2 cups water butter I took the sausage and sliced it lengthwise into 4th's and then diced it up. I got the enameled cast iron dutch oven warm with some olive oil in it and put in the sausage. Once it started to brown I added the veggies and garlic and let all that sweat out until it looked nice and tender. Then I added the chicken stock and let is simmer for a minute or two. Then I added the tomatoes, beans and seasonings. The I let that simmer for about 20 minutes with the top off while the rice cooked. When there was about 5 minutes left on the rice I drizzled some olive oil on the french bread and grilled it on the cast iron flat top with a little bit of season salt and garlic powder. A little rice on the bottom and a little rice on the top, a little bread, a little Tabasco, some chopped green onions for garnish, and a chilled adult beverage...
