Can someone please explain why its necessary to bend at the waist when shooting from an elevated position, rather than just lowering your bow arm? I need a WHY its important, please.

This may not be the answer you are looking for but this is my thoughts:

Repeatability = Accuracy

The same form, the same anchor point, the same grip, the same everything, with each shot is how you obtain accuracy with a bow.

If you bend at the waist, you keep your same form, some people call it the T form. If you drop your arm, you have changed your form and that can affect accuracy.

The radius of your arm and torso is longest when your arm and shoulder are perpendicular to your torso. When making severe uphill or downhill shots, pivoting at the waist retains the same radius when standing and shooting on a level surface. If you only drop or raise your bow arm, your draw length will be reduced.
