I assume by St. Louis you mean spare rib vs a baby back rib? If so I prefer a spare rib when I'm smoking my own. St. Louis is a slightly trimmed spare so yea. I'm trying to find that one go to rib, but I love both lol

Don't matter to me. I can make both fall off the bone You and everyone else who overlooks ribs. I have never understood the fall off the bone BBQ infatuation. If you cook any meat long enough it will fall off the bone.
