Any of y'all cook/eat rattlesnake? Now that I know there are some in the areas I hunt, I sorta want to kill one and cook it up? watched some videos on cleaning them - seems pretty simple and straight-forward.
I guess my first question is, is it legal to kill them? Is there are particular season or anything? Also, can you eat them any time of year or are they like other things that you're only supposed to consume them in certain times of year?
I assume the best/easiest way to cook is to fry - what would y'all season with?

One I had was cooked on the grill.
To add is wasn't all that. More work than anything. It tasted liked chicken.

Only ate it once. What I remember is the taste was ok, but damn at the bones.

they don't appear to be federally protected (only rattlesnake I could find that was protected was something called a "Massauga", found up north), and are not on the list of prohibited vertebrates in AL, based on the following list. http://www.outdooralabama.com/nongame-vertebrates-protected-alabama-regulations

I have wanted to kill one and try it. Watched some Youtubes of cleaning. I've been in Alabama for twenty years now and have never seen one. I saw Diamondbacks on several occasions when I lived in Florida. The State of Fla. offered bounties for them back then.

No not me. I look at this way. Folks I know and trust say it taste just like chicken so I much rather eat the chicken. Plus the chicken is easier and much safer.

I think it tastes much better to fillet the meat off both sides instead of cutting the whole snake into chunks. Fillet it off and you are left with 2 long strips of white meat and no bones. I've always cut it into short strips and fried it, but I suppose you could cook it any way.
The good thing about filleting it is nobody has any idea what they are eating unless you tell them. And everybody likes it if you don't tell them what it is

When I was in the USAF - a friend from Texas used to make Rattlesnake Chili several times a year. He made GREAT chili, but I don't think it was because of the rattlesnake.
I've also had it fried - the best I can recall it was OK.

To me, the best rattlesnake is one killed while hiking, skinned and fillet, glazed in honey (fram packets) with some Zataran's seasoning, skewered on a green hickory stick and then cooked over the campfire. This is the only way I've eaten it.

Back many moons ago,,I had to eat rattlesnake to be able to pass a survival course in the boy scouts,,, while some scouts were reluctant to eat some ,,,as hungry as I was ,, well,, let me say I'd eat it any time,, meat was white as snow and very tasty.
the raccoon was good too.
