Irish Jr. loves shrimp tacos, so last night he and Mrs. Irish got together and made some the way I do it. Peel and devein about 2 pounds of fresh gulf shrimp. Season them with salt and pepper. Toss them in a hot cast iron skillet with some olive oil. Let them get a little color. Pour in an 8oz can of tomato sauce and a good amount of Valentina Messican hot sauce and reduce to simmer. Throw in about a small palm full of cumin. Simmer for a little bit and at the end throw in a big pat of real butter to tighten everything up. Stir and serve. Before all that gets started Mrs. Irish makes her cilantro lime slaw: Half a head of cabbage sliced thin Once good sized Jalapeno pepper seeds and all chopped up. About a half a cup of chopped fresh cilantro Juice of one lime About 3/4 cup of Dukes mayonnaise About 1/4 cup of sugar Salt Mix all that up and let it sit while everything else is cooking. Meanwhile take your corn tortillas and get your griddle on about medium and drizzle a little oil on it and toast all the tortillas and stack them on a warm plate I like to serve mine on the warm tortillas, with the slaw, a squeeze of lime, a nice ripe avocado, and a drizzle of Valentina, a nice cold beer and a shot of chilled tequila.

Lawdy...that looks delicious!!! Sadly, I can't eat shell fish..

Looks mighty fine. I see you have some avocado in there. Have you ever tried a spicy avocado cream sauce with your taco. I make one that I use with blackened fish taco and I am sure you would like the kick. Just avocado, sour cream, jalopeno, lime juice and red pepper flakes with a pinch of cayenne pepper, pureed.
