Boneless pork chop smothered in caramelized onions cooked in diced bacon with spices, diced russet potatoes with salt & pepper lightly fried in EVOO, sesame four cheese toast served with a side of spiced Chilton County peaches put up last summer...yummmmm

How do you cook artichoke? You wash well and trim bottom (top too if you prefer, I usually don't) flat, so after it is cooked it will sit straight. Put in large pot of water and boil. I add lemons sliced or quartered to the water for taste. Boil until tender, usually about 20 minutes or so.... they turn a darker green. Remove from boiling water and drain. Served with hollandaise sauce for dipping and they are awesome!!

Well, danged if I can find any recipe I might have used so here is what I remember....
One deer shoulder topped with Stubb's beef marinade, unseasoned tenderizer [I use Adolph's - no MSG], salt, pepper and garlic salt. In addition, I slice up some garlic cloves and jalapeno pepper, make slits in the meaty parts of the shoulder and slip a slice of each in the slits. You don't want to over power the meat just add some flavor. So, how much you use would depend on the shoulder size.
After that, I wove a bacon blanket on top of the shoulder so it was entirely covered in bacon. Added to that I rough chopped celery & bella mushrooms. I then added jalapeno slices [those were pickled] but I use fresh too. Added to that I julienned some carrots, added sliced red onion [lots] and some grape tomatoes. You could really use any veggies you like with this...
All of this was cooked tightly wrapped in foil that I sprayed with cooking spray before hand and popped in the oven at 350 degrees for about an hour....I check after an hour and if the veggies need a bit more time, I cook a bit longer. When those veggies are done, your meat should be perfect. You don't want to over cook it.

Cooking now....boneless chicken thighs smothered in new potatoes, baby bella mushrooms and finely chopped onion all tossed in EVOO with salt, pepper and garlic powder for seasoning; served along with green beans from the freezer & grown in the garden last year and cheese toast....smellin' mighty good up in here!!!

Had a hankerin' for some pasta so I made a tomato based sauce using: tomatoes I canned last year, ground venison, onion, celery, garlic, bay leaves and some fresh basil and parsley from my window sill herbs. Sweated the onion, celery, and garlic while browning the venison & once everything married and got happy, I added one jar of Basilico [tomato basil sauce] and spices and let that simmer. Cooked some penne mezzani rigate pasta al dente, drained and added to the sauce mixture and let that simmer for a bit. Served with toast points, a light shave of Parmigiano-Reggiano, topped with some rough chopped fresh parsley and it hit the spot!

Chicken Florentine & Farfalle [bow-tie pasta and white meat chicken with spinach in a Parmesan cheese sauce], with a salad of sweet cranberries, roasted pepitas, Brussels sprouts, cabbage, romaine, kale, carrots, green onions and Poppy Seed dressing [made with Greek Yogurt] and garlic bread. Just the usual: Rye bread, Swiss cheese, cornedbeef, sauerkraut all topped with Thousand Island dressing and grilled. I use olive oil spray rather than butter when I grill. Grill slowly so the ingredients all heat through, cheese melts and flavors marry. That is it.

That food looks mighty fine...last night I made venison burger steaks with fresh green onion and bread crumbs added with seasonings, pinto beans and ham, turnip greens and a pone of homemade buttermilk cornbread....it was so tasty and I was so hungry from working outside all day I forgot to take a pic. Oops.
Been outside most of the day today and am going to pan sear two beef fillets in some butter and garlic finishing them off in a hot oven. Serving with a half a russet baked potato and salad. Too stinking tired to even fire up the BGE!!

Ribeyes in a skillet with salt pepper butter and garlic, Brussel sprouts, creamy chicken rice, & mashed taters. Yum...we had filet's in the iron skillet with those same seasonings a couple of days ago.

Photos of a few recent meals.... Filet seared in a hot iron skillet finished in a hot oven with peppers, mushrooms and onions, along with salad and a baked potato. Homemade chicken and hand rolled dumplings [had tonight and yum!]. Probably won't have these again till it gets cool again but a rainy day seemed just right. Fried okra, large Lima beans, squash, homemade cornbread and baked chicken thighs.

Forgot to take a pic, weather is crappy, but turned 5lbs of Kobe ground beef into 10 burgers and hit the grill with them. All the fixins to go with. I ate two......... Good stuff.....

We need that Redneck egg roll recipe. Redneck Sushi Roll I just did this for fun, but it did taste pretty good, kinda like a no pan smoked meat loaf 1.5lbs venison burger 2 eggs 1/2 fine chopped onion 1 cup bread crumbs 2 teaspoon salt 1 teaspoon pepper 2 teaspoons garlic powder Thick slices cheddar cheese Bacon Mix everything but the bacon and cheese (I didn't have any bread crumbs the other day, but it held together OK, I was extra careful when moving it) Evenly as possible press meat out on a sheet of foil in a rectangle shape, maybe 1/4 inch thick, place cheese slices on the meat to cover...use the foil to roll the ground meat and cheese. layout the bacon side by side (the width of the gound roll) on another sheet of foil, carefully place the roll on one end of the bacon and use the foil to roll. I had the grill set for 2 zone cooking at 350 degrees, cooked the roll off heat for 40-45 minutes, then brought the grill up to 450 and seared all sides of the roll...used a long spatula and tongs to move the roll so it didn't break in half...

Fried corn chutney with bell and poblano peppers, garlic bread, twice cooked pork (boiled the crap out of some fatty wild boar to remove as much fat as possible and fry it in olive oil to crisp it up), cheese and broccoli and some nice rum punch. Here by myself.

I dreamed about red beans and rice last night...must have gone to bed hungry! So, today I made a big ole pot of red beans chock full of sausage, ham, spices, onions, peppers and celery. This house smells fine!! Getting ready to cook the rice to go with and have a feast!!

Avocado Chicken SaladIngredients:2 large chicken breast or three average [boiled & diced or shredded] 2 large avocados or 3 medium [Diced] 2 cobs corn [steamed/cooked and taken off the cob] 6 ounces bacon [four or five pieces, cooked and crumbled] 1/4 cup green onion or chives chopped 2 tablespoons dill leaf [chopped if fresh, crushed if dry] 2 boiled eggs Dressing:3 tablespoons lemon juice 3 tablespoons EVOO 1 teaspoon salt or salt to your taste, these ingredients need salt 1/8 teaspoon black pepper Directions:Combine ingredients in large bowl. Combine dressing in small cup and once blended, pour over ingredients in bowl and toss. In addition to the above ingredients, I added a fresh bell pepper to the mix before tossing with the dressing and some fresh cherry tomatoes from the garden when served. Had these two items in the garden and just added them because I could. Made this salad this morning and have had it chilling in the refrigerator. Got a small portion out a few minutes ago to sample and YES!! Winner winner chicken dinner!! This salad is not heavy and with the lemon and dill it has a fresh flavor. If these ingredients appeal to your palette, I highly recommend it!

Okay, so it is about to rain and that cold front is going to blow through bringing us our first real cold snap. We are heading to our camp for a few days and I am cooking up a storm so I don't have to do it there!! Homemade mac and cheese homemade beef stew ...in the oven now slow cooking to yummy goodness. Making one more pot of soup that we like to put in a cup and practically drink...tomato, potato, onion and okra with spices cooked up in good ole chicken broth!! Yall stay warm this weekend..

Gonna be a veggie night around here...picked collard greens, pulled turnips [not greens], yellow squash and a head of cabbage this morning from the fall garden. Collard greens, turnips, yellow squash, coleslaw, pinkeye purple hull peas from the freezer and a pone of cornbread is what's for supper!
Hubby will moan because there is no meat but once in a while vegetables are what we need!!

Making some fresh cream of broccoli soup!! Have never made it before but I love it...almost all of my broccoli came in at the same time!! Don't want to freeze it and we have been eating the heck out of it!

Recipe....
Ingredients 35 m 6 servings 207 cals
2 tablespoons butter; 1 onion, chopped; 3 stalks celery, chopped; 3 cups chicken broth; one clove garlic, smashed; 8 cups broccoli florets; 3 tablespoons butter; 3 tablespoons all-purpose flour; 2 cups milk; ground black pepper and salt to taste
Directions Prep 10 m Cook 25 m Ready In 35 m Melt 2 tablespoons butter in medium sized stock pot, and saute onion, garlic and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. *Alternately, you can use a stick blender and puree the soup right in the cooking pot.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and salt and serve. [I melted the butter, added the flour and cooked it a bit just like I do for gravy and then added my milk..worked like a charm.]
*I used the stick blender and was very satisfied with the outcome.
Lots of cream of broccoli soup calls for cheese but this is so creamy and smooth it does not need any cheese and WOW has far less calories without cheese.
