rofl Opossum is very fat with a peculiarly flavored meat. To dress, immerse in very hot water[not boiling] for 1 minute. Remove and use a dull knife to scrape off hair so that skin is not cut. Slit from bottom of throat to hind legs and remove entrails. Remove head and tail if desired. Wash thoroughly inside and out with hot water. Cover with cold water to which has been added 1 cup salt. Allow to stand overnight; in the morning drain off the salted water and rinse with clear, boiling water. Make a stuffing as follows; Brown 1 cup finely chopped onion with 1 tablespoon butter. Add chopped opossum liver and cook until tender. Add 1 cup bread crumbs, a little chopped red pepper, a hard-cooked egg, finely chopped, dash Worcestershire sauce, salt and water to moisten. Stuff opossum with mixture, fastening the opening with skewers or by sewing. With 2 tablespoons water roast in moderate oven [350deg f.] until meat is tender and richly browned. Baste constantly with the opossum's own fat. Remove skewers or stitches, serve on heated platter. Skim fat from gravy and serve with baked yams. If you get road kill make he is not to buggered up.

I always wanted to try opossum until one of my friends told me about seeing three of them crawling out of the ass of a bloated cow in a field. Then I heard one or two more folks say basically the same thing.

I'd try raccoon. I'll gnaw on my thumb before eating possum, unless I'm literally lost in the woods and haven't eaten in days.

I like raccoon but my family won't eat it so what I did was start quartering them up and grinding the meat and making jerky out of it. Tastes the same as any other jerky that way. It's a lot of work though because there's not much meat to work with until you have quite a few of them.

We caught one when I was a kid and the lady that cleaned house some and baby sat us some took it home with her and penned it up and fed it for a few days. Best I remember it was ok. She served it with sweet taters and cornbread.

In all honesty, the one time I ate Opossum it was very tasty. I was tricked into trying it thinking it was wild hog which was in the tray with it. The guy that fixed it loves eating those things, he traps them and feeds them corn for week or so.

Once they told me what it was I couldn't go on eating it.

I believe this was the old fashioned method for getting possums cleaned out for the dinner table. Keep them caged or penned somehow, feed them apples, pears, table scraps and fresh water - all to clean out the chit they'd been eating - for about 10-14 days, and then eat them.

I understand the revulsion. I feel the same way,but honestly catfish eat stuff just as nasty or worse. Shrimp are the cockroaches of the sea. It's just what we have been conditioned to accept as normal.

When I was in my late teens,I came in to my grandmother's house and helped myself to some beef roast with potatoes and carrots she had in the oven.I asked her where she had bought the roast because it was one of the best I had ever had,extremely tender with a melt in your mouth texture and mild flavor. You already know ,she told me it was opossum.I didn't eat anymore,but it was delicious,easily the best beef I've ever tasted.LOL
