The only people I know who claim coots are bad to eat are people who have never actually eaten a coot.
Cajuns eat them all the time. Cajuns also eat nutria so.. I have had coot. It's not for me. Tastes like liver with a hint of boot leather.
Yeah, well, I always heard there were three kinds of suns in Kansas: sunshine, sunflowers, and sons-of-bitches.

Just an FYI, coot would be close to the last waterfowl I would eat. Glad you specified waterfowl.

I have eaten coot before. Even put it up as a taste test for my wife(next to the usual wood duck). She said the coot tasted better I'd have to have a serious talk with the wife if she said "coot taste" better 
Do not regret growing older, it's a privilege denied to many!

Cajuns eat them in gumbo. But cajuns will eat anything. Perchjerker, he might say they taste like chicken. ooooouuuwwheee. They eat anything down there on the bayou! Stinking coots and good smelling ones too!

We used to shoot coots with a ,22 at Ellis Landing when I was in hs. I learned a lot about bullet trajectory doing that. Pretty amazing to nail one at 300 yards. Kids, don't try this today. This was back in ancient times when Wilcox co was the wild west. Plus, I had fallen under the influence of evil companions; all of them best friends of Bhamfred.
