I have probably in the ballpark of 100 knives because my wife and kids and everyone else that knows me knows how much I like knives.With that said;for skinning and parting out a deer I only use Old Timer Sharpfinger knives.I have every model they have ever made and have used them for at least the last 25-30 years.For me it's a no brainer for deer hunting.All of my other knives are just case candy.

I use a Kershaw BLACKOUT. I bought it over twenty yrs ago. Its an assisted opening knife. Keeps an edge. I paid around $75 for mine. Now they are $47 in Walmart. My favorite too. I use a fixed blade buck knife with a gut hook and a serrated bottom third of the blade for my gutting and skinning.

I have a Buck "Personal" model that I bought back in 1970 while stationed at Ft Benning, GA. I paid $6.00 for it at the PX. The MSRP on it is now $52.00. I still have it, and it will always remain my "go to" blade.

I have the Outdoor Edge Swing Blaze, I like the knife as it holds an edge really well.

I have a knife almost exactly like the Swing blade, but it's a Leatherman. I've used to dress several hogs, no complaints. I also have a Spanish Muela that looks real similar to a Sharpfinger, forget the model, offhand, but it's the absolute sharpest knife I've ever had, not counting my Outdoor Edge Razor Pro. Depending on where I'm at in the dressing process, and how much I'm having to put my hands in the way, I might use 2 or 3 different knives while cleaning.
Well behaved women never make history.~ Out back Quit laughing...I think I broke something.
Fifteen is my limit on Schnitzen-Gruben, Baby...
I have OCD and ADD, so everything has to be perfect, but only for a minute.
