Used it for elk last year, was extremely difficult to clean. I gutted one Elk with it then had to buy a new knife. I couldn't recommend the Havalon Piranta enough. Dressed an elk and a deer with it this year and it is amazingly sharp. I also use the outdoor edge razor for when I need a knife with some backbone. The Piranta and outdoor edge razor are both about $25 on amazon. Money well spent IMO

I use a buck knife with a S30v blade. Keeps sharp and it's easy to sharpen. AND it's made in the USA

Look at the Buck Knives PakLite field kit, or the aforementioned and legendary 110.

Also recommend Skullworks' knives. Gorgeous, hand-crafted, worth the money, will last for years and get the job done.

I have just a regular lock-blade Outdoor Edge knife w/the orange handle like that, and love it; holds an edge for a long, long time.

I can't speak for the durability of a skullworks knife as I just bought it a couple of weeks ago, but it is beautiful. It also fits my hands well and has the right balance and weight in my opinion. I would recommend his knives.

I use a Kershaw BLACKOUT. I bought it over twenty yrs ago. Its an assisted opening knife. Keeps an edge. I paid around $75 for mine. Now they are $47 in Walmart.

Case sod buster junior stainless and hunters orange. Best I've ever used. Most want a lickback but I f you cut with the sharp side it's never an issue

Case double trapper stainless is good too. Hell any knife is fine by me. Worked at deer processors for 5 years I could probably clean one with a steak knife from out back if need be

Dang Shaw, that's a great looking knife.

My two cents: gutting is a nasty job. Fixed blades are generally easier to clean because they don't have moving parts to trap stuff like blood and hair. I also
waffle a bit on blades themselves. Hard steel holds an edge much longer but that same property makes them harder to sharpen. Conversely, soft steel gets dull quicker and is a breeze to bring back to razor sharpness with a few strokes of a decent pull-thru sharpener. That being said, I still resort to using an old Gerber Gator that I've had for years. I've got much more expensive knives but some of them are much harder to sharpen as already mentioned. Lastly, it doesn't hurt my feelings to plunge a $20 knife into a deer chest cavity full of blood while fishing around for the esophagus. I know knives were made to be used but I tend to baby the ones that cost more.
