Well... I read the thread about new York Strips, and so even though I usually cook ribeyes or fillets, I bought some nice NY strips at Publix and cooked them perfectly to 140 degrees. They were good and the flavor was good, but honestly, they weren't as buttery tender and the fat was not as buttery as the ribeyes I normally cook. Anyway, had them with a nice salad and a smaller baked potato than usual. I had to make another batch of my steak seasoning and in case anyone is interested, from the bottom up in the little shaker is: Hungarian hot paprika. Sea salt Black Pepper Onion powder Crushed dill Crushed red pepper flakes Garlic powder 2 parts of the first 3 and 1 part of the last 4. Then I just shake it up and shake some on both sides of the steaks.

I'm a ribeye man as well. Never understood the strip folks.

Strip is the worst cut there is in my opinion. If I can't have a rib eye or fillet I jump to the sirloin.
