A little of my dry rub:

Paprika
Chili Powder
Brown Sugar
Salt
All in equal amounts
Black Pepper
Garlic powder
Onion powder
All in half amounts

I washed the chicken in water, patted dry and rubbed everything down and let it sit for a while.

Got the Kamado going using the Cowboy lump charcoal and some two cotton balls soaked in 91% alcohol place right in the top of the pile. I put on the chicken when the temps came up to about 250 degrees.

This is my first time for a controlled cook on the Kamado, so I have been playing with it to keep it between 250 and 350 degrees. It is easier than I would have imagined to maintain the temperature.

Rubbed and rested...



About an hour in and looking pretty good already... grin Loving this grill...

Well... These turned out pretty decent even if I did over shoot my internal temps. The Alabama white sauce I made, made up the difference. Smoked chicken and that white sauce are just made for each other:

3/4 cup mayo
1/4 cup apple cider vinegar
1/4 cup apple juice
The juice of one lemon
I teaspoon of garlic powder
Salt and pepper to taste



Mrs. Irish made a Thai cole slaw that was pretty damn good.

1/2 Cabbage shredded
Carrot Shredded
Cucumber seeded and shredded
5 Green onions
Edamame [About 1 cup cooked and cooled]

Dressing
1/2 cup olive oil
Juice of 2 limes
Handful of fresh cilantro
1/4 cup sugar
Salt
Pepper

Run that crap through the Ninja and mix it all up and pour it over the other stuff and stir. That is some good chit!

Drink of the day/evening was some Guatemalan beer and Altos 100% Agave Tequila. I finished up with a nice IPA...

That looks might good. Your rub is about the same as mine but I add chili powder, fresh ground coffee and cumin and a bit more brown sugar.
