Equal parts melted butter and Texas Pete hot sauce. Salt and pepper quail. Wrap a piece of bacon around it and secure with a toothpick. Dunk in butter/hot sauce. Smoke or indirect heat till done. Chicken wings are great like this too!

I smoked some last Sunday like this:
Make a brine (1/4 Cup Salt, 1 qt Buttermilk, 1/2 gallon water). Stir it up good and put the birds in it for 2 hrs before cooking.
Take them out of brine and pat dry. Coat them with a rub or seasoning you like. Heat the smoker up to 225 an cook for 2 hrs.
I served mine over greens and cheddar grits.

Any advice on grilling quail? Batter and fry it and grill it in boiling oil.

Or, marinate in Zesty Italian, Allegro, or Dale's....brush with brown sugar, top with a cream cheese/jalapeno relish mix, wrap in bacon, secure with a toothpick, and go to grilling.
