I think if they're in "cruise mode" or chasing, it's tough to get their attention. X2. I have hollared at a chasing buck before and couldn't get him to stop.

I've stopped them with soft bleats if they are close and I've yelled at the top of my lungs if they are far. They will stop for either as long as they aren't chasing.

My natural instinct when I jump a deer or see a running seer is to whistle. More times than not they'll stop. I can't count the number of bucks I've jumped walking and then killed by whistling to stop them.
Like someone already stated, when a buck is chasing stopping him is a whole different thing. I had a 150" deer run a doe by me at 10 yards during muzzleloader season in Tennessee this year. I did everything from whistle to bleat to yelling hey you stupid mother$@*!+# at him. As far as I know he's still chasing that doe.

I almost always shoot them walking or trotting. Get out front , find a opening and when he comes through shoot. Old mature bucks will often ignore you when you try to stop them, or put it in high gear. Sometimes they'll stop all right, where you can't get a shot, then the next move will be at mach 2. If they are trailing a doe, they'll do what the doe does, spook the doe and you're screwed. When hunting in timber learn to shoot them on the move.
