Get a ThermaPen. Removes the guesswork.

Mrs .308 likes hers well done so I cook it first over medium heat to get it done but not burned then I kick the fire up to around 700 & sear mine med rare.

When I cook steaks I take orders on how they all want them cooked and then I cook every one of them the same amount of time, except mine and anyone else who wants them rare.

1", 700deg F, 2.5min on each side is perfect rare-med rare. Maybe double that for well done?
