I field dress them like bamaboy said. It's normally a long hike out where I hunt on public land so it's a must to lighten the load. If all I have is a knive it takes a little effort to split the pelvis, but not too much. After that cut the genitals and wind pipe loose, and pull. It's pretty easy once you figure it out. I did slice the guts on the first few but I've got it down pretty good now. The trick is to be careful when you split the pelvis. That's where you can pop the bladder.

just gut it . when you cut the chit tube just reach as close to the butt hole as you can from the inside and pull the deer pellets back and cut it . leave the butt hole and pee bag .

if you want to save the liver or heart take zip locks with you

He uses a saw tooth blade from a multitool and saws the pelvis and breast plate.

I have also seen vids of guys using a small cheap hatchet to work through those bones.

My favorite way to field dress deer is the gutless method, same with any big game. Pretty much get a whole deer in one trip with my frame pack, every now and then 2 trips. It just depends on how far I have to pack it. I don't get all bloody and I don't have to deal with the guts. Back home though, we always hang'em and start the cleaning.

First thing I do is remove the male organs. It opens up a good place to split the belly for gutting.

It takes less than a minute to field dress a deer. It is not like its a full blown operation. I remove everything, wash it down good and throw a bag of ice in the cavity if its hot outside before it gets to the cooler.

I gut mine, but I like to let them hang in the cooler with hide on for a few days. I can do it with, or without splitting the pelvis bone and all with a 6" folding buck knife in 5 minutes. The pelvis just takes a good whack on top of the blade, especially with a bigger buck to get it to pop.
