It ain't bad sliced into pasta sized strips, seasoned, flowered and cooked with shoe string onion slices.

Yep, slice that heart into long thin strips, batter , fry, serve with hot sauce. Awesome.! Ill do that, then slice up a fresh cold sweet onion, and place a piece on top of the heart with a little hot sauce and man is it good, the crunch of the onion adds a lot! Shame some people may never even try it. I've read before that bear heart is the best tasting, never had it though.

I used to do a liver and heart dish in the oven. Slice and trim the liver and heart into strips as mentioned above. Lightly roll in flour and sear in a skillet with a little olive oil until lightly browned. Salt and pepper to taste. Drain and place in a shallow baking pan. Cover with Cream of Mushroom soup and bake at 350 degrees for 30 minutes.
I firmly believe that a double gallows should be constructed on the East Lawn of The White House. Politicians who willfully and shamelessly violate their oath to uphold and defend the Constitution of the United States of America should be swiftly tried and, upon conviction, publicly hanged at sunup the day after conviction. If multiple convicts are to be hanged they can choose with whom to share the gallows or names shall be drawn from the hangman's hat to be hanged 2 at a time.

I have eaten heart..Not great. But, saw a fellow cook one on a hunting show the other day: cleaned the heart like a bell pepper ( cut all the insides out) then cut the inner tissue out. Placed between cling wrap and pound really thin. Trimed the edge, seasoned with salt and pepper, dregged in egg wash and battered in bvread crums. Black iron skillet with butter, couple minutes. May have to try that one.
