I’ve never cooked lamb and only have eaten it once. I think I’m going to pick some up this weekend. Any tips on cooking it? Med rare. Plenty of recipes on the web.

I’ve never cooked lamb and only have eaten it once. I think I’m going to pick some up this weekend. Any tips on cooking it? We seared them in a cast iron skillet like we would a steak. Cooked to med-rare. they were super tender. I did chop up the fresh thyme and rosemary when I threw it in with the butter and garlic. I think that turned out well.

I use a filet knife to trim off the gristle that's along the outer loin, just like you'd trim the skin off a fish filet. Then I marinade for minimum of 4 hours in a mix of olive oil, balsamic vinegar, rosemary, garlic, and lemon juice. Kosher salt on both sides of the chops before grilling, searing, roasting, whatever. Get meat temp to about 125-130 and then pull and let rest five minutes. Costco usually has the best prices for the meat. We eat them all the time.

I've turned a lot of people that tell me "Oh, I don't like lamb." to "THIS is lamb?!? It's better than filet!!"
My favorite way to cook them: Get a French Cut Rack and smoke it to blue-rare (about 2 hrs at 225deg...just want the smoke flavor). Then trim out the fat cap and lollipop them...cut between each rib so you are left with a good chunk of meat on each, give em a quick dunk in Hoover Sauce or Country Pleasin Grillin n Chillin sauce, sprinkle with Sure Shot Sids, ground mustard and pepper. Sear over a hot grill for 3.5-4 mins per side.
*for pre-cut chops like the OP, same method as above, without the smoker and cook about 4-4.5min per side.

I’ve cooked many, many pounds of the ones like the OP posted. 13 years of camp cooking (had them one night every weekend of season for 6 people) and any get togethers or duck hunting trips. Usually cooked 15-18 chops, I think 36 was my most cooked at once. So far, there hasn’t been anybody that didn’t like that way of cooking them.
