Will do when i get settled in this evening This was first time to make for Po'boys, but I've made it several times as topping for Oyster's. This day i used 4 10oz boxes of chopped spinach, 2 cups of mozzarella, some grated parmesan cheese, few shakes of seasoned bread crumbs, little salt n pepper and Tony Chachere's to taste, tablespoon of trinity shake, little bit of Louisiana hot sauce, tablespoon of W sauce, one tablespoon of pernod, 3 or 4 ounces of whipping cream, one chopped onion, and i made some Wrights bacon earlier that morning and I saved several pieces for it. Easy just to pop in the oven, but it was a fine evening and i love to have an excuse to throw some wood in the smoker lol, so i tossed on the smoker and left it uncovered for 15 mins then covered (spinach can get bitter quick from the smoke) and just let it slowly cook for about an hour, then i uncovered and topped with more cheese and the bacon. Only thing i would do different would be to ad little more cheese and probably would've used the whole 8oz of whipping cream, was just afraid it might’ve ended up being too wet and make the bread or Oyster's soggy, but that wasn't an issue cause i drained it off a few times, and one thing i like to do is take a spoon push back an area where you can put a little layer of napkins and tilt the pan and just let the napkins absorb the unwanted juice. I do that with lots of different things sometimes...Oh if i would have cooked in the oven, i also would've sprinkled more bread crumbs on top and browned with the brolier...
