We have always used the same recipe to mix our pork breakfast sausage seasoning, but I’m thinking of trying something different this year. I’m going to be killing 3 hogs, expecting about 125-150 pound of sausage. Anyone got a tried and true recipe or even a certain brand and blend that you really like? Nothing that is heavy sage, not a big fan. Want to stay with a medium or mild sausage. Thanks in advance.

Leggs has several breakfast sausage seasoning. Mild, medium, etc. https://aclegg.com/products/leggs-signature/sausage-seasonings/Just a FYI I know some people like sage and some don’t, same with spice. They explain theirs. Idk who does Cracker Barrel’s sausage but it’s one of my favorites. It’s not heavy sage either.

Can't help you witha recipe as I love sage. I had to try a lor of different seasoning mixtures over yhe years before I found one that suits me. I used ground chicken to expiremet with. It's fairly mild and doesn't interfere with the flavor of the spices. I go heavy sage and about half as much fennel, salt, black pepper cayenne, and crushed red peppers.

Garlic and Chinese five spice. I'm not a real pepper head but a bit of crushed red really highlights pork.

Southeastern Butcher in Pelham. They have all different types. I like the Cajun and the Spicy Italian. They supply most of the processors around the SE.

Odd that I stumbled across this. We’re looking for something identical to Odom’s Tennessee Pride mild. Anyone know what mimics that? We’ve been just mixing our own but haven’t got it right just yet.
