Recently built a big vertical smoker. Just gotta build my water tanks and it’ll be complete. Hoping to get time soon to do some ribs and brisket. Can’t wait to eat some burnt ends!. Absolutely zero bbq sauce. Any of you have some good tips?

I'd like to see smoker pics. I'm going to be building either an offset or vertical smoker. I'm trying to decide which way to go.

A member of my wife's family by marriage to one of her cousins made the best Brisket in the world. For every family eating all anyone wanted to know was if Johnny was cooking Brisket. Sadly, he passed away unexpectedly and suddenly before he passed it along. Not even his brother knows. I know this, he cooked it so it was juicy and flavorful but the real secret was the sauce he made and then wrapped the whole thing up in foil and back on the smoker for an hour or two.


Lord, please help us get our nation straightened out.

I do have a notebook with my recipes that my wife has access to if something happens to me though. 😉

Waygu, Angus, Hereford, Charolais etc they all about the same if you let them reach 32-36 months old and feed em right. They’ll all marble great with feed and age. Little off topic but that my thoughts

A la Mr Hoover Lee (RIP) of Hoover Sauce! Store burned to the ground recently. Mrs. Freida and Stan made it out, but Tim (our age) didn’t make it out. My Mother and Mrs. Freida grew up together in Ruleville and I grew up playing baseball with Tim. That area has been hit hard in the last couple of years.

Dang! I hate to hear that. I had met Tim and spoke to him a few times at the store. I sure enjoyed talking to Hoover when he was around. Only Asian fellow I ever knew that sounded like a Kentucky colonel.
