After many attempts over the past few years i finally fried some chicken that i was happy with. Still working on getting the flavor down pat but the cook on the chicken is alot better!

My late Grandmothers' secret was frying it in a Cast Iron Skillet.....with the LID on the pan. Said the steam helps cook it and keep it moist inside.

That's how my mom taught me.

There is science to back this up.

My Granny Lynch did the same thing but never said why, I always assumed it was for grease splatter but what you said makes sense.

My goodness gracious - that looks absolutely amazing.

With the exception of fried deer cube steak, fried chicken would absolutely be my 2nd favorite meat. And Sir, it appears that you have mastered it. Legs and thighs are hard to beat when it comes to fried chicken.

That breading is on point. KFC fries theirs in a pressure cooker so a heavy lid would help do the same if imagine. Good thing with chicken is you can throw all kinds different spices and tweak to what you like. Jam up entry
