I won’t use a processor who doesn’t hang for at least 7-10 days.
Would walk over a naked woman to get to a gobblin turkey!

What I did was quarter or cut to up to where it would fit in my stainless steel pots cover it with water and added salt. Then left it in a fridge just above freezeing for three days then put it in the freezer over the two days .
Or
I'd cut it up , washed it good and straight to the freezer. When I cooked it id soak it salted water over night and cooked it

They obviously don't have the fat content of beef. In my experience, 3-4 days is sufficient. I haven't been able to hang one in a long time, but dry aged deer meat is incredible.
Now for y'all meat soakers, soak em for 3 days to 3 months. You're ruining the meat anyway, so the time doesn't matter.

I’ve never aged venison and can cook some dang fine meals with it. 🤷🏼♂️ Yep! Never have.

Chit…we had deer kilt in october still hangin in march in the walkin cooler in texas…whats to spoil whennits that cold…boyem tenderlones gits fine when they git that black look tooem with a little mold
