In between meetings yesterday I put on a pot of Chili and invited a couple of our friends over for dinner.

1 pound of organic ground beef
1 pound of organic ground pork
1 32 oz can of diced tomatoes
1 can of black beans
1 can of chili beans
1 chopped onion
1 chopped bell pepper
1 chopped poblano pepper
3 garlic cloves minced
3 small canned Chipotle peppers minced
1 tsp Salt
1 tsp Pepper
1 tbsp Brown sugar
1 tsp Garlic powder
1 tsp Onion powder
2 tbsp Chili powder
2 tbsp Cumin
1 tsp Oregano
1 tbsp cocoa powder
1 tbsp Better than Bullion
2 bean cans of water, or broth, and possibly some wine or beer mixed in...
1-2 tbsp Corn meal

I have added Worchester sauce before, but forgot about it last night, but that's my basic recipe and is well loved by all our friends, family and us.

I have also used venison or Chunked up chuck roast too, but last night that's the meat I had on hand. The key here is at least 2 pounds of whatever meat you have.

Note: Those are all approximate measurements, because I rarely measure spices, I just pour a little pile in my palm and guess. The most important part is to taste after it simmers for at least an hour and then see if it needs more seasoning. If you taste early your are wasting your time and might over season, because the flavors don't come together until is simmers for a while.

Brown meat in olive oil, add veggies and seasoning and cover until they are tender stirring frequently, add beans and tomatoes and water bring to a nice rolling boil stirring to keep the bottom from burning and then turn it down, partially cover and let is simmer for a few hours. Add a sprinkling of corn meal to add a little corn flavor and to thicken the liquid. Let that simmer a little bit more and serve with hot sauce, sour cream or Greek yogurt, fresh grated cheddar cheese, fresh sliced jalapeno peppers, homemade cornbread and an ice cold beer.

We use it anywhere you would normally use sour cream. You don't have to feel guilty for piling it on.

Same....I regularly get asked for my chili recipe and while it's usually similar, I'm not sure I've ever made it exactly the same way twice. I mean the base recipe is generally the same, but it's always slightly different based on what I have on-hand and what catches my eye at the grocery store.

adding a beer to it is a must, though
