crenshawco Booner Joined: Sep 2003 Posts: 12,874 Montgomery / Luverne	I always reverse sear them. I usually make a chimichurri sauce to serve over it. When you cut it pay attention to the grain. It changes directions once you get up out of the tail section to where it gets thicker.
