I got a guy bringing me 10 dozen ears Saturday morning. I can’t work it up until Sunday evening. How would you keep it? Cooler with ice or just leave it out?

Don't leave it out, It'll go through a heat and sour. I would put it inside in the AC and lay it out on a sheet or something in a single layer so that air can circulate around the ears.

Dumb questtion, but I would imagine its still in the husk? If so, out of the sun and can breathe, it should be fine. A misting or two of water will help. If you can't get in in the shade, definitely go the cooler route with the drain open. Ideally stick it in the fridge. 120 ears should stack nicely, if you have a shop/garage fridge. I have helped pull a many of truck loads right before dark and headed to the farmers market and trade days a few hours before daylight. I think that drive before daylight gave it the airflow it needed. Repeat customers was proof that it was fine. I think getting it from field temp to room temp in a 24 hr period is sufficient but just an opinion. Keeping it from going through the initial heat process is key. It loses sweetness with moisture loss.

It will be in shuck. I’m thinking getting wife to put in clothes basket set over a ac vent in house.

I've been pulling my Silver Queen,husking immediately and putting it in a cooler with ice water. You could do the same in the husk. As mentioned above QUICK COOLING is the key to retard the sugars from turning into starch.

It’ll be fine inside and in the air condition. I put them in crawfish sacks and have left them for a couple days before and there were perfectly fine when I shucked them. However this is super sweet varieties and they hold their sweetness longer then regular sweet corn.


It's hard to kiss the lips at night that chews your a$$ all day long.
