I really love a sxs shotgun, would it make a decent turkey gun. Something along the lines of a stodgier uplander or Cz bobwhite Something like this what you had in mind? Howl is right that you will probably have issues getting both barrels to shoot the same POI, but it's usually not that difficult to solve the problem. A SxS gun has to have the barrels regulated to account for the recoil, and I believe every manufacturer designs them for field loads. You put 2 TSS loads in it that are shooting way more payload than the gun was designed for and it's not going to shoot the same. The solution is to sight in your tight barrel wherever it wants to hit, then file the end of the choke of your open barrel to get it to the same spot. It's best to use a gun with replaceable chokes so that you don't permanently alter the gun. Good luck finding a good one!
