I cut meat once upon a time and my refrigeration career has had me in too many commercial kitchens and food processing plants to count so I have a little knowledge about it. Sorghum Hollow and Weavers are my first choices. I wouldn’t hesitate to use Blacks again either.

Farm Fresh Meats in Baldwin County. The reason is they are an FDA inspected butcher shop unlike places that process deer only. They shut the complete business down, including retail sales for several days each year to get the place clean for an annual white coat / cotton glove inspection.

Took some deer in to the food bank yesterday and have to say I felt bad leaving the dead deer at this facility. The place was the most disgusting place I have been around in a long time. The smell that entered the vehicle 50 yds from the building made me dry heave and was the 2nd worst thing I have ever smelled (number one is a taxidermist shop I will never enter again). The brown water that covered the cooler floor looked gross and the pots of brown brain boil matter were just sitting around stinking etc. When I left I realized how lucky we are not to have only one option nearby for processing. With that said what is the cleanest processor you have used? The Heiberger Grocery is far and away the cleanest I have ever seen. Was this prentices in Brent? If so it’s always been that nasty but open year after year. I’m not sure who takes them deer but somebody must since they stay in business. James definitely runs a clean operation at heiberger and they also have some great steaks he cuts in the grocery store.

Had no idea heiberger grocery processed deer. We always drop deer off at a place in Brent that you are probably talking about. My favorite is the brain boil by the sign in spot. That place is nasty but they have always done a great job for a great price. Take them to James at Heiberger. He is terrific and you should not die from whatever fungus/bacteria is growing inside that other joint
