Burn some rosemary. Char it. Fine dice. Run it in unsalted butter and you got you a herb butter. Run some garlic salt and black pepper heave on roast and then run that herb butter all over the rib roast. Cook to desired temp and make you some horse 🐎 radish sauce as foller
Sour cream Horse 🐴 radish 🧄 paste Dash worstershire sauce 🧄 salt Pepper

Cook it low and slow until it as medium rare. DON'T start at high temperature and reduce heat like many recipes call for you to do. This overcooks the outer portions of the roast. Season the roast the night before and remove it from the refrigerator at least one hour before you start cooking. Put in a 200° oven and roast until temperature in the center is 120°, then remove roast from oven and cover loosely with foil. Let roast rest for 30-60 minutes then put back in a 450° oven for 5-10 minutes to sear the outside.
This will give you a roast that is med rare throughout and delicious.
