I don't have a fancy smoker, so when I wanted to smoke a mallard from last winter, I had to try and convert the 'ol trusty Weber kettle into one. It worked great! I made up a simple pickled mix of scallion, thinly sliced cucumber, and julienned carrots. Added some sugar and rice wine vinegar and a dash of sesame oil then let it sit. Sliced the duck and enjoyed the spoils (and memories) of a great hunt!

Fine meal right there. My son has got me eating alot of his duck lately, even had some Gadwalls that were delicious. Guess it depends on what they are feeding on? That and how they are prepared. This duck was brined and marinated before smoking. It was also cooked to about 145 internal temp and pulled. Most people skip the brine and/or overcook.

The fat is so good. I also save the carcasses and make stock for gumbos, etc.
