I redone this recipe yesterday and used chicken thighs instead of chuck roast. THis is becoming one of my favorites to cook, and i really am glad i added celery salt.. Good stuff!!

It’s like doing a roast in the crock pot, after being properly seared, and the udon noodles take the place of potatoes, carrots, onions and celery. Great recipe by the way. Next time I’ll double the noodles.

Interesting. I don't get the eggs in it though. I always thought eggs were for dishes that were lacking in other protein sources, like a salad or an Asian noodle soup, but there's a whole side of beef in there.

The eggs do something? Just like when a “real Gumbo” has boiled eggs in it after those Cajuns throw all the leftover whatever in the pot and make the “roo” with flour and bacon grease.

It’s not a proper New Orleans yakamein without the boiled egg. Locals call it “Old Sober” and is a very popular hangover cure.
