I've had a LEM 1 hp (about $500) for about 4 yrs. We got it to grind food for the dogs as we feed raw. It will handle anything chicken and smaller like rabbits and ducks, but chokes on turkey necks and turkey legs. We grind the whole chicken meat, bone and skin and if you can stuff it in the hole, it can eat it. It will sometimes protest if 2 leg bones go in at once but it keeps on grinding. It won't take frozen anything. I tried a frozen rabbit and it jammed and tripped the internal breaker. However, if all you are putting in is de-boned meat, this thing will grind a lot in a hurry and may be overkill for your needs. I also have a foot switch and I highly recommend getting one. You will be busy with your hands and they will be greasy and hitting the mounted switch on and off would be a pain. You will want to stop and go frequently. I cut up whole chickens into about 6 strips that will fit in the hole. There is no way I can keep up with the grinder. I'd look for something used in the 1/2 hp or better and Hobart is the gold standard. They are listed on craigs frequently.

I have a 1 HP from Gander Mountain a few years ago and do about 20-30#'s a year. Works fine. Like other say, works best if meat is near frozen. Cut your meat into small 1-2" chunks and don't over-feed it.

Been using an LEM (I think #5) for several years. Grind 3 to 4 deer a year. Works great for my needs. I only do burger, so not sure how it would work for cube or sausage.

Buy the largest you can afford. We had a small one and it would work your butt of and get nothing done. The foot pedal is a must.

I was going to buy the LEM when I bought my Cabela's Carnivore, and they moved my ship date 5 times. I needed one that day (2 deer from Texas to process), so off to Cabela's I went. Good decision, and I have been very happy with it.
