We are going over to some friend's cabin this afternoon to hang out, have a few beers, watch some football and eat some good food. Since I was going to smoke today, I volunteered to bring the brisket. I did something a little different this time...

I took some of the fat trimmings and bundled them into some foil packets, poked holes in the packets where the fat would render, i placed them on the upper rack in the kamado so the fat would drip on the briskets and baste them in their won fat trimmings. So far it appears to be working good. These have been smoking since about 0800 this morning.

I cut it up and filleted (?) the thick end after I carved off the fat.

Our smoked brisket and Mrs. Irish's homemade BBQ sauce, dates stuffed with almonds and wrapped in bacon, duck wrapped in bacon, veggies by Christy, dips by Bettina... Great dinner. I gorged myself...
