We have always blanched our corn prior to freezing (cob and creamed). From what I understand, blanching kills enzymes and will make the corn taste fresher, longer. More and more, I'm hearing of people putting their corn up and skipping the blanching process. What do you say?

I blanch when I cut kernels of the cob. Otherwise I freeze the cobs without shucking them. I took out the last sack we had from last fall and they were just as good as all the rest.


It's hard to kiss the lips at night that chews your a$$ all day long.

I just cut off the ends of the corn, check for worms and peel off about half of the shuck. Put the ears in gallon sip-lok bags and put them in the freezer, take out what you want and throw them in the microwave.
