I always vacuum seal. It’s really nice on fish too. Don’t have to freeze them in water and wait for a gallon of ice to melt.

I use a vacmaster chamber sealer. They are more expensive initially but bags are much cheaper than the cheap sealers. The chamber sealers can even seal water. The bags I use are around 45.00 per thousand and are thicker than the cheap sealers plus they are rated to boil food in.
Two roads diverged in the woods and I took the one with deep ruts,hills and mud.It may be bumpy but WHAT A RIDE!

Steven Rinella recommends first wrapping in a layer of Saran Wrap to squeeze out air and help keep air from reaching the surface of the meat. Then wrap in butcher paper and it supposedly last for a year or longer with no problem. probably longer than that....I think I've read/heard him say at least a couple of years. After finding a few packs of meat that were vacuum-sealed by the processor, only to end up leaking and getting freezer burnt, I'm considering just using the saran wrap/freezer paper for any I do myself.

What has been your overall experience with it? Some of the reviews suggest there is a bit of a learning curve with some of these machines.

I'm extremely impressed with it. Wish I had bought one years ago instead of wasting money on 2 foodsavers. It was easy enough to learn plus the bags are much better and cheaper.
