We hadn't seen a couple that are great friends of ours in a while, so I called them up and invited them over on short notice last night to catch up, have a few drinks and enjoy a nice pot of Gumbo...

I like to give the sausage a little fry in the pot first and then set it aside before starting the roux...



Then I do a little food prep on some onions, bell peppers, celery and I had a couple of previously grilled chicken thighs...



Then you gotta make a roux... I just leav in the sausage pan drippings and add butter and flour and stir and sip and stir and sip... Repeat...




The cook has to have refreshment...




Once the roux is done [or your tired of watching it and stirring] throw in the chopped up stuff and stop it from cooking... I added a tiny bit of chopped up garlic too... grin




I then added about 1/4 to 3/8 cup of Worcestershire sauce and some beef broth, salt, pepper, red pepper flakes, and parsley. You don't need to go crazy with the seasoning in Gumbo, all the different flavors of the food take care of that.

I then saute some okra in a skillet in some bacon drippings before I toss then in the gumbo. While all that is simmering I peel some shrimp and chop up a couple of flounder fillets. When everything gets close and I have tasted and adjusted the seasonings. [I threw in some sugar this time to balance everything out.] Then I throw in the fish and shrimp.

Of course you need some toasted, buttered French bread and some rice to go with it...




Then it's time to say Grace and dig in...

Judged the World's Duck Calling Championship Gumbo Cookoff once. Something like 30 entries. Most were good. Some were "eh." A few were "needs help." One, when all us judges took off the lid of the little cup, were like "What is this? Looks like motor oil with a filmy sheen." Nasty.

I've judged some wild game cook offs. Ton of fun. Had some awesome stuff. Only couple I remember that I didn't card for. Moose and barbecued turtle. Most of it's really great stuff though by some super creative people. My wife won first in the fame division once with Elk lasagna but we hadn't cooked in one in years.
