I always marinade in Italian and throw on hot grill till mid rare. Hard to beat.

Equal parts melted butter and Texas Pete hot sauce. Salt and pepper quail. Wrap a piece of bacon around it and secure with a toothpick. Dunk in butter/hot sauce. Smoke or indirect heat till done. Chicken wings are great like this too!

I smoked some last Sunday like this:

Make a brine (1/4 Cup Salt, 1 qt Buttermilk, 1/2 gallon water). Stir it up good and put the birds in it for 2 hrs before cooking.

Take them out of brine and pat dry. Coat them with a rub or seasoning you like. Heat the smoker up to 225 an cook for 2 hrs.

I served mine over greens and cheddar grits.

My wife bakes them with rice and broccoli, we have this at least once a month. She buys the quail at the grocery store.

Soak in mixture of 1:1 Moores:water for about 1h. Grill at 400deg until done (20 min or so.)

This sounds amazing.

Or, marinate in Zesty Italian, Allegro, or Dale's....brush with brown sugar, top with a cream cheese/jalapeno relish mix, wrap in bacon, secure with a toothpick, and go to grilling.
