Didn’t have time for the good ole 16-18 hr smoke so I tried a new “Hot and Fast” recipe. Wasn’t up to Par with the standard but it wasn’t bad. Brisket was on sale so I figured what the heck. 9 hrs vs about 18. Was a 5hr cook with 4 hr rest. Normal is 14 hr cook with 3-4 hr rest.

I’ve started doing a turbo cook with butts too, 275/325.
I can’t tell much of a difference and the bone still falls right out.

I personally think the pork butt is more forgiving with fat content when turbo cooking.

Yep. I can't tell a difference in Butts. Briskets are a different story.

Good looking cook.
Often wondered about a faster brisket. The KJ I have is XL and has bad went
225-250. Gotta get it up close to 285-300 for some clean smoke.
