I've never had 'em, but heard they mighty good. I know folks love their fish fillets an all, and i like 'em too, but give me a pile of backbone to fry up, and I'm Happy, Happy, Happy 😄

Many.....many folks don't realize there's a BIG chunk of really rich meat under that head. I've gone to some of the Docks when Charters are coming in and gotten all I care to clean. The Deck hands cleaning fish ain't gonna fool with them.

Try Tuna collars discarded off the black fins and yellowfin’s at the docks, too.
The bigger ones, you can smoke like chicken.
Collars/throats, bellies, and roe are some fantastic big saltwater fish parts that get ignored a LOT.
Fried speckled trout roe might be one of my favorites.

When I deckhanded we would clean the filets of snapper, grouper, triggers, toss the carcass in the discard bucket, then once the customers left we’d pull them out and cut the throats out to take home.

Exactly! Those big 20lb plus snapper also have a good think of meat above their nose. We used to cut them out as well. We called them fish fingers. They are delicious fried up. Grouper cheeks are good too
