When I really want to show out I cook at the cabin. Have a 16" skillet there. I cook 24oz Wright brand bacon in the oven in a hotel pan. I take yellow cornmeal and add white shoepeg corn. Use white cornmeal and add yellow mexicorn. Crumble the bacon and divide it into both batches. Use the grease in the batter's and in the skillet. Pour one mix into the skillet. Then cover with a pound of sliced pepperjack cheese then pour the other mix on top of that. Folks say it's the best cornbread they have ever had. I agree
