My son is about to grow out of his youth 7mm-08 and I'm looking for a .243 or 7mm-08. Preferably Ruger, but willing to go another direction. TIA

Can an adult size stock be put on it?

I hunt with either a 7-08 or 308 Ruger carbine, which is basically youth sized and they are probably the best rifle for woods work or shooting houses with fields under 150 yards for me.

He is already shooting a 7mm-08, either replace the stock with an adult stock, or just buy a new 7mm-08. I have several custom built gun's, but hunt with a Ruger American Predator in 308 win. It's a tack driver with 165 gmx ammo.

I'd look at a Savage Axis in 350 Legend. Way more knockdown power and still minimal recoil. You can pick one up for under $400

Are you trying to justify buying another gun?
