Do something with deer meat to make it like a roast beef sandwich. Was at a deli today eating a sandwich with thin sliced roast beef on roll, horseradish sauce, cheese, and au jus. Need some kind of slicer to get it thin. I wonder how it would turn out?

Take any roast from a deer and crock pot it with onions, garlic, carrots, seasonings, broth, whatever. Then shred it up. But if you want sliced you could do any deer roast in the oven low and slow until it reaches temp and then let it cool and use a meat slicer to do the thin slices. I've got a slicer and definitely works better after the meat has cooled if it's cooked or a little bit frozen if it's raw.

Brine it, smoke it, slice it. It makes good roast deer sandwiches with some au jus.

I did one a little while back. I did it in the pellet grill until it got about 125-130. We took the leftovers and made sandwiches the next night. It was damn good.

A friend of mine used to make French dip sandwiches with the hind quarters and those things were great.

Partially thawed, deboned deer hind quarter, sliced pretty thin, cooked sliced pieces in a crockpot with bone broth and onions until tender but not falling apart.

We like to use deer neck roasts in crock pot. Once it starts to fall off the bone we pull it apart, use the broth to make the gravy and throw it on some French Bread. We call them Roast Beast Po-Boys!

Here's what I do. Pull it when she hits about 130*.
