Picked up a fresh shoulder today and am wanting to smoke it. I've done 100s of butts but never a shoulder. Let's hear some ideas.

Not a whole lot of difference. The butt is a part of the shoulder as is the picnic. It will typically have a little less fat/marbling but I cook them the same

Less fat. Smoke for three hours at 250 then wrap tight in foil and cook for another five at 220.

Raw. I was figuring to do it the same as I do butts. John hope ya'll are doing well. Was planning a trip down last week to meet with a guy about starting a maintenance company but didn't work out. Maybe I can get down there pretty soon.

John nailed it. If it was a ham it would only taste like smoked ham. Which is really good as well.
