You can add me to the list that prefers deer burger over cow. Cow is too fatty and shrinks too much.

Ours is straight deer, cleaned well, dusted with some dry seasonings and drizzled with a little worcestershire sauce. Pan fry on low until medium.

Patties will be very tender and/or crumbly until they are close to being done. Rough handling will end up with sloppy joes, but they do well if you are careful. We will also do bacon burger sometimes, but really prefer straight deer.
