WMS blends would be my choice. Deer Magnet followed by Alabama Blend I planted the Alabama blend last year. First time I’ve ever used a seed blend I didn’t make myself. It was very successful. I’m going to use it again this year.

Wheat oats and rye.
We planted WMS seed last year at the recommended rate and it was good and th deer ate it up and had cover in the field just about all summer. However it seemed to be a little thin so this year we are going to plant it and add some 3-way (wheat oats and rye) to it so it will be a little thicker.
If you're gonna be stupid you better be tough.

OP asked for 3 so I'll say oats, winter peas and clover.
We're planting WMS deer magnet this year with an extra 25lbs per acre of frostmaster peas and tamo606 oats, using 100lbs per acre of fertilizer at initial planting then spraying with liquid fertilizer after emergence. Trying out Clark's Plot Nutrients liquid at 2 gallons per acre.
Adopt the pace of nature, her secret is patience. Emerson
