Have a link to the blackened shrimp recipe? I just cook and don’t have any recipes but I will glad to share what I did With you. 1 lb fresh large shrimp cleaned deveined Redfish blackening season 4 tbsp butter Mission wheat tortillas Fresh tomato diced Publix cole slaw (add about 1/2 cup of sauce and mix well) Fresh avocado sliced Shredded Colby jack cheese Sauce 1/4 cup of olive oil 1/4 cup of water 1/2 cup sour cream 1:2 cup fresh cilantro 1/2 cup fresh green onion Juice from two lime 1/2 fresh avacado 1tsp salt 1tsp cayenne pepper 1tsp Sirachhi hot sauce Purée all of above in food processor or blender and refrigerate. Mix shrimp in melted butter and then season both sides with generous portion of blackenimg season. Heat cast iron skillet on high heat with a couple tbsp of olive oil. Cook shrimp about 1 minute on each side. Don’t over cook or they will be rubbery.

I'm definitely going to try that cilantro sauce. I get something similar from a guy that works with us. He and his wife are from Venezuela and they make homemade empanadas with a green sauce. The green sauce is so good I'd dip rubber in it and eat it.

Looks great! I tried to blacken shrimp a couple of weeks ago and cooked them too long, and they were indeed rubbery, just as you said. I cooked them the same as I do bass fillets, and that is 90 seconds on each side. I was already thinking that a minute per side would be about right, so it's good to read that is right. I'll try it again.
