I believe I've seen Gus's on TV. He uses wet batter doesn't he? It looked like it when I was there last week. I sat at the bar and you could see in the kitchen. They were getting the chicken out of a tub that appeared to be a wet batter. I've never seen them batter the chicken but it seemed to be a wet batter to me when I've eaten there.
