Someone made me realize we haven't been posting food lately, so I snatched some pics off my phone and here they are in no particular order... This is some chicken enchiladas that we make. Mrs. irish just puts frozen chicken breasts in the crock pot with salt, pepper, chili powder, cumin and a can of green chili's in the morning in low. When we get home we shred it up with two forks and mix it with cream cheese. Then we lightly toast some corn tortillas place them all in a oiled pan add enchilada sauce (This time we used green) add lots of cheddar to the top, cover with foil and bake. Uncover for the last 10 minutes or so and let the cheese get browned. Add more of your favorite sauce and serve. I served it with Cowboy seasoned black beans with tomatoes and a nice salad. Seasoned pork tenderloins and roasted root vegetables with cranberry and orange relish... I'll be honest, I actually used some canned biscuits for the first time in my life and they turned out pretty well. These are the big "southern style" kind. I rolled each one out in some flour until it was about the size of a corn tortilla. I took some italian sausage, bell peppers, onions and Italian seasonings, browned the meat, then added the veggies and seasonings and let is simmer for a while, while making a quick marinara sauce. I then took the biscuits flats, put a little egg wash around the edges, filled each one with the meat mixture, added some shredded Parmesan and mozzarella, folded them over and cut in a couple of slits. I then egg washed them all on the outside. baked until golden brown and I served it with the sauce for dipping. I was surprisingly good. Christmas gift wrapping usually requires an alcoholic beverage. This is: A few dashes of Angostura Bitters A splash of Sweet Vermouth A nice Rye Whiskey A twist of orange slice A cherry on top It's my version of an Old Fashioned Irishguy's Baked Ziti with Italian sausage and pepperoni. IrishGuy's Gumbo with Conecuh sausage, chicken, and gulf shrimp Mrs. Irish's stuffed french toast with cream cheese filling and Banana's Foster sauce for topping and little smoked baby dicks.
